Too many questions, not enough detail. 
Looks like you've got a good set of wavelengths. I would reduce the number of things that could go wrong, and get a colour hologram in the simplest way possible. So probably silver halide.
Whether beams are in line depends on which technique you are using. You might try Denisyuk just to keep things simple.
I would start with two wavelengths. It's almost as good as three. Say red with green or blue.
One thing you could do at first is to illuminate a scene with two wavelengths, and switch off all other light. This will give you an idea of the colours you can expect to get in the hologram. You might be surprise with the range of colours you can get just with two beams.
Make sure you can get a good holograms with each beam separately, again to reduce the number of factors that can go wrong.
You can make a sandwich of red and green/blue sensitive film. By trial and error select the one to be nearest you.
To start, you might make the exposures separately on two different plates and then sandwich them. This again makes things simpler. Then you might try a panchromatic film.
